Petalos, salt flakes from Spain
Salt is still extracted by hand from salt farmers in the Sierra Nevada today. It is placed in salt basins called salt gardens. Sunlight, evaporation and the local winds create the famous little flowers of salt, the Fleur de Sel (Flor de Sal).
Its special salt structure, small salt flakes, gives the sea salt a special bite and makes it crunchier than normal table salt. It gets its extraordinary taste from its calcium and magnesium content. It is also often used for the salt rim of cocktail glasses. Due to its special structure, this salt is not used for cooking, but only as table salt.
