Flor de Sal Algarve / Fleur de Sel
Salt is still extracted by hand from salt farmers in southern Portugal today. It is placed in salt basins called salt gardens. The famous small salt flowers, the Fleur de Sel (Flor de Sal), are created by solar radiation, evaporation and the local winds.
It is not completely dried, still has a relatively high residual moisture and is therefore not suitable for salt mills.
Its special salt structure gives the sea salt a special bite and makes it crunchier than normal table salt. It gets its extraordinary taste from its calcium and magnesium content. It is also often used for the salt rim of cocktail glasses. Due to its special structure, this salt is not used for cooking, but only as table salt.
